Artichoke Parmesan Bruschetta
1 (6 oz) jar marinated artichoke hearts, drained and chopped½ cup freshly grated parmesan cheese1/3 cup finely chopped red or white onion5-6 tablespoons mayonnaiseFrench bread baguette, sliced into 1/3-inch thick rounds
1. Mix mayonnaise with artichoke hearts, parmesan cheese and onion.
2. Preheat broiler
3. Spread mix on top of French bread rounds
4. Arrange bread rounds on baking sheet
5. Broil approximately 2 minutes, until spread begins to brown
Makes 16 – 18 appetizers
